According to legend, Amaretti were first baked by a young couple to honour the cardinal of Milano. The round crunchy bittersweet almond biscuits called Amaretti are made by slowly baking a blend of sugar, apricot kernels and egg whites. They are then decorated with sparkling white sugar and wrapped in colorful papers.
